Monday Meals 4/18

I've found it's much easier to stay on budget when I have a PLAN for the week of what's for dinner. It makes things much less stressful when I come home- and if I have a plan I'm much less likely to take the easy way out and drive through for fast food on the way home.

Here's my plan for the week. It'll be a short week of cooking- we're heading to South Carolina on Friday to visit with my grandparents!

Monday: "Semi-Homemade" Pizza
  • Pillsbury Pizza Crust $1.60 at HT w/ coupon
  • Cheese .89 from sale last week
  • Bought pepperoni full price (eek!)
Tuesday: Leftover Shrimp Carbonara (made this Sunday night instead of picking up pizza)

Wednesday: Tofu Stir Fry
  • Tofu from HT Super Doubles
  • Mixture of leftover veggies
  • Mahatma rice on sale $2.00 at HT w/ $1.00/1 coupon (I'm getting a rice cooker this week!)
Thursday: Leftovers or Pizza

Friday-Sunday- Out of town- very excited to spend some time with my family!
