Monday Meals 2/28

I've found it's much easier to stay on budget when I have a PLAN for the week of what's for dinner. It makes things much less stressful when I come home- and if I have a plan I'm much less likely to take the easy way out and drive through for fast food on the way home. Here's my plan for this week...

Monday: Tofu Stir Fry (I need to use the rest of the tofu from last week!)
  • Tofu 2.19 @ HT last week, 1.50/2 printable (doubled last week) = .69 Tofu!
  • Brown Rice- Free last week w/ HT Super Doubles
  • Egg Rolls- .50/each HT sale a while back
Tuesday: Chicken Parmesean with salad
  • From the freezer- cooked large batch 2 weeks ago
Wednesday: Fish (Wahoo), served over pasta & veggies
Thursday: I'll be working late- a SmartOne night for Andy!

Friday: Pasta w/ Vodka Sauce - didn't have the vodka to make this last week!

Saturday: Personal Pizzas made w/ garlic bread
  • Garlic bread $1 from a few weeks ago at HT
  • Pepperoni on sale a few weeks ago at HT
  • Italian cheese blend B1G1 at Lowe's Foods through Wednesday
Sunday: Burgers during the NCSU game? TBD....
