Monday Meals 3/14

I've found it's much easier to stay on budget when I have a PLAN for the week of what's for dinner. It makes things much less stressful when I come home- and if I have a plan I'm much less likely to take the easy way out and drive through for fast food on the way home.

We had a really nice weekend visiting my parents- an amazing meal in downtown Memphis, and better-than-restaurant filets prepared by Chef Barry (my dad) :) Now, it's back to reality...

Monday: Andy's on his own

Tuesday: Tuna Medallions & Shrimp Salad
  • Sashimi Tuna $5.99/lb at HT until 3/15
  • Shrimp $4.99/lb at HT until 3/15
  • Italian Mix $1.99/lb at HT until 3/15
Wednesday: BBQ Sandwiches

  • Picnic Pork .99/lb Lowe's last week
  • Veggies from HT sale a few weeks ago
Thursday: Tofu & Veggie Stir Fry
  • Tofu from Super Doubles a few weeks ago- my last one
  • Asian noodles free a few months ago
Friday: Whatever fish is on sale this week...

Saturday: Leftovers- or maybe out (we'll be house shopping!)

Sunday: Turkey Pot Pie from freezer

  2. I use a varation of this recipe : http://allrecipes.com//Recipe/vegetable-and-tofu-stir-fry/Detail.aspx

    I batter (flour, tsp yeast, salt, pepper, sage, and cayenne pepper) and fry the tofu first. I then sautee the veggies, and add the tofu back at the end. Serve on top of rice or noodles w/ soy sauce.

  3. great ideas! you should move out to knightdale, the prices are great, and they are building it up so nicely, plus there is quick access to 540 and 440 and none of the west raleigh (ie cary) traffic....plus we could go shopping together! good luck!
